In a few months the association of “Jeunes Restaurateurs d’Europe” will be eighteen years old and will become “mature”, led by the fifth president since its founder Walter Bianconi “to whom I will never be grateful enough for having had this idea in dubious times,” writes Paolo Marchi, journalist and gastronomist of “Il Giornale”.
Apart from who they were, are, and will be, the Jeunes were born with a young spirit: fresh, vivacious, creative, full of energy and desire to live up to their motto “Talent&Passion”, the indispensable talent to create good - possibly great - cuisine, and the passion and virtue that permits one to overcome even the darkest moments with ever a new project in mind and never stop to rejoice since then one risks to be passed even while running if he crosses someone faster, who certainly will not stop to look vainly into the mirror.
